Granny Smith apples are a light speckled green in color, though some may have a pink blush. They are crisp, juicy, tart apples which are excellent for both cooking and eating out of the hand. They also are favored for salads because the slices do not brown as quickly as other varieties. A Granny Smith Apple usually has a slightly more sour, sharp flavor than other apples.

Dilled Shrimp Salad
Feel like having something lite and refreshing for dinner here is a great recipe!
Ingredients
- 1- 8 or 9 ounce package frozen artichoke hearts or one 14 ounce can artichoke hearts, drained
- 1/3 cup dairy sour cream
- 1/4 cup mayonnaise or salad dressing
- 1 tablespoon snipped fresh dill
- 1 teaspoon finely shredded lime peel
- 2 tablespoons lime juice
- 1/2 teaspoon coarse ground pepper
- 2 pounds frozen cooked and peeled shrimp, thawed, halved, and tails removed, or frozen cooked salad shrimp
- 1/2 cup sliced celery
- 1/4 cup thinly sliced green onion
- Baby bok choi, Belgain endive (3 to 4 large heads), or other greens
1. Cook frozen artichoke hearts, if using, according to package directions. Drain, cool, and coarsely chop. Coarsely chop canned artichoke hearts, if using.
2. Combine sour cream, mayonnaise or salad dressing, dill, lime peel, lime juice, pepper, and 1/4 teaspoon salt in a medium bowl.
3. Gently stir in shrimp, artichokes, celery, and green onion.
4. Chill till serving time.
To serve, arrange baby bok choi, endive spears, or other greens on a serving platter. Spoon shrimp mixture into endive leaves or onto bok choi or greens.
Makes 30 servings.
